Vaya Con Dios, El Diablo…

The Hoboken hospitality community mourns the loss of Francesco “Paco” “El Diablo” Carcamo, who has lost his long battle with cancer at the age of 59.

Paco was a tremendous talent in the kitchen, having worked at a number of venues here in Hoboken—most notably cooking up amazing fare at the former Maxwell’s (closed in 2013).

Paco was a local celebrity on the Hoboken bar scene, when he wasn’t helping out in the Elk’s Club kitchen.

A true character and a good soul, he will be missed by many…
