Juicy pomegranate seeds pop!
Roasted macadamia nuts crunch!
Dried wild blueberries are so sweet you’ll think it’s a cheat day!
Sauté one cup of red quinoa in a splash of olive oil for a few minutes until fragrant.
Then add 1½ cups of water (substitute coconut water for the plain stuff if you’re feeling extra adventurous) and simmer away, covered, for about 15 minutes until the liquid is absorbed and spirals pop from the grain.
Let it cool and add your favorite fruits and nut meats just like we did here at The Mile Square Table!
Done and yum!
